El problema era que la harina no pod\u00eda ser almacenada por mucho tiempo. Con el tiempo, por lo tanto, la parte del grano responsable de la amargura de la harina fue eliminada: la planta oleaginosa, as\u00ed como el fruto y la c\u00e1scara de la semilla. Aunque esto permite conservar la harina, se la priva de sus sustancias m\u00e1s valiosas. En nuestras harinas blancas, volvemos a agregar (\u00abfortificar\u00bb) las sustancias m\u00e1s importantes para una alimentaci\u00f3n completa. Sin embargo, especialmente el grano entero contiene todo lo que el cuerpo necesita para estar sano y vital.<br><\/p>\n\n\n\n<p><strong>El tipo de molienda hace la diferencia<\/strong><\/p>\n\n\n\n<p>En en los molinos de piedra, el grano es descascarado desde el exterior al interior y se muela suavemente. En nuestro molino a piedra trabajan dos piedras extremadamente duras que resulta en una harina muy fina, \u00f3ptima para ser utilizada en pan integral. La molienda a piedra permite que la harina tiene um comportamiento de alta manejabilidad durante el amasado y leuda parecida a una masa de pura harina blanca. Es la harina ideal para procesos de conducci\u00f3n larga con masa madre. <\/p>\n\n\n\n<p><strong>La harina a piedra se fabrica en peque\u00f1os lotes.<\/strong> As\u00ed, es siempre fresco y arom\u00e1tico. <strong>Debes  trabajarlo dentro de una semana, para evitar la oxidaci\u00f3n de sus valiosos componentes.<\/strong><\/p>\n\n\n\n<p><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Hasta hace cien a\u00f1os, s\u00f3lo se usaba el grano entero para hornear y cocinar.
